Dear Editor - I write in response to Mr Howard Saies (Amazed by food rules, March 1st).
As Mr Saies points out, we did at one time make our own produce at this hospital and indeed, we were famed for our salmon sandwiches. However, as a trading organisation we cannot operate in this way if we want to comply with today's health and safety regulations and demonstrate due diligence to our customers. What I can do is assure Mr Saies that his bakewell tart was sold to him with confidence. The cake was individually wrapped and displayed a 'best before' date to show that it was safe to eat. It is this confidence in our products that enables us as a charitable organisation to continue trading alongside other high street names in what has become an increasingly regulated business. WRVS looks forward to welcoming Mr Saies back to the tea bar and I hope that he recognises the added value our volunteers bring to this particular industry. I can confidently promise that the profit from his bakewell tart will have helped raise funds for the hospital.
