A Carmarthenshire goat farmer is launching a new cheese made with cow’s milk.
Loraine Makowski-Heaton, whose Kid Me Not business specialises in healthy-eating goat’s milk products, is taking the business in another direction with the launch of Ffynnon’s Folly.
Using milk produced on three local dairy farms, Loraine is making the new cheese in response to customer demand.
“People often asked us if we sold cow’s cheese so we knew there would be a market for it,” says Loraine.
“The smaller farmer’s markets we support have been great for market research, we could see there was a demand so we thought it was time to branch out.”
A new throughflow pasteuriser, capable of processing 500 litres of milk an hour, had created capacity for producing another cheese. Previously Loraine could only pasteurise 500 litres of milk a day.
A strong market has developed for the Kid Me Not range of luxurious hand-made chocolates, award-winning fudges and hard and soft goat’s cheeses and Loraine is capitalising on that success with the new Ffynnon’s Folly cheese.
She sources the milk from Llaeth Cymreig, a co-operative of west Wales dairy farmers, and it is delivered directly from the farms where it is produced.
Loraine experimented with several recipes before amalgamating two and developing her own. She describes the result as a cross between a Caerphilly and a Cheshire.
“I’m delighted with the result and people really seem to like it,” she says.
The cheese takes its name from the family-run farm at Talley near Llandeilo.
Loraine has been given a helping hand to develop and launch the new cheese by Cywain, an initiative set up by Menter a Busnes to help primary producers in Wales add value to primary produce.
“Llaeth Cymreig had been helped by Cywain and they suggested I could benefit from their support. It has been very helpful,” says Loraine.
